Edamame and Corn Succotash
4 ears sweet corn or 2 cups frozen corn
kosher salt and fresh ground pepper, to taste
4 tablespoons butter
2 tablespoons flour
1 cup half and half
2 cups edamame beans
1/4 cup heavy cream

1. If using fresh corn, clean, salt and pepper each ear, add 1 tablespoon of butter and wrap in foil. Place on grill for 15 minutes. Allow to cool and cut from ear.
2. In heavy pan melt butter and mix in flour stirring to make a roux. Add half and half and simmer to thicken.
3. Add sweet corn and edamame beans. Simmer for five minutes.
4. Stir in heavy cream, salt and pepper.
