Easter Sunday & A 7.2 Earthquake

Seems San Diego and the surrounding areas were a bit shaken on Easter Sunday. A 7.2 earthquake hit the area around 3 pm or so. I believe there was only one fatality. But a whole bunch of shaken nerves. Seems the Universe wanted to get everyone’s attention and it worked.  Yesterday was beautiful here in Las Vegas, however today the wind is back to 40 miles an hour gusts and really dark clouds. We had a great dinner. Our tradition is Gas Grilled Ham with a Apricot, Dijon Mustard glaze. Scalloped Potatoes, Parmesan Crusted Asparagus, Deviled Eggs, and Broccoli Slaw. Dessert was Fresh Strawberries and Ice Cream. Yep, enough food for plenty of leftovers this week. It’s like having leftover Turkey. You can make so many different recipes.  I’ll post a few here, once I create a few dishes.
